Sirloin steak
Beef steak cut from the loin
In American butchery, the sirloin steak is a cut of beef from the sirloin, the subprimal posterior to the short loin where the T-bone, porterhouse, and strip steaks are cut. The sirloin is divided into several parts. The top sirloin is the most prized part and is sold under that name.
